Spiced Tomato Chicken and Rice Tray Bake

Chicken and rice all baked together with a good kick of spiciness 
Ingredients
  • 1 small onion, finely chopped
  • 5 ml crushed garlic
  • 30 ml margarine
  • 1 cup brown rice
  • 750 ml hot water
  • 48 g sachet Knorr Dry Cook-In Sauce Savoury Mince mince
  • Robertsons chicken spice
  • 1.2 kg chicken drumsticks
  • 1 large handful baby spinach
Cooking Method
  1. Preheat oven to 180 C

  2. Scatter the onion and garlic on the base of an oven tray and place small knobs of margarine randomly on the base

  3. Pour the rice on top of the onion and spread out to make an even layer

  4. In a bowl mix together the water and the contents of the sachet of Knorr Dry Cook-In Sauce Savoury Mince to combine

  5. Pour this mixture over the rice

  6. Generously season the chicken drumsticks with chicken spice and arrange them on top of the rice

  7. Cover with tin foil and bake in the oven for 40 minutes then remove the foil and bake for a further 25 minutes or until the rice is tender

  8. Remove from the oven and top with baby spinach leaves and serve
